#NCooks No Bake Mango Creamcheese Cake



Are you a sucker for Mango? How about Cream Cheese? Then keep reading.. As I'll be sharing a recipe for a NO BAKE Mango Cream Cheese Cake! Literally no oven nor steamer needed. ;) 

INGREDIENTS:

  • 2 cups Crushed Graham 
  • 2 tbsp Sugar 
  • 1/4 cup Unsalted Butter 
  • 4 oz Cream Cheese
  • 1 cup Sugar 
  • 1/2 tsp Vanilla 
  • 250 ml Alaska Crema - All Purpose Cream - CHILLED Overnight
  • 3 pieces Ripe Mango
  • 2 tbsp Unflavored White Gelatin
  • 2 tbsp Sugar 
  • 1 cup Water



1. Combine crushed graham, sugar and melted butter to be the base of your cake.  Mix well until it looks like wet sand (lol) then put the mixture into a pan. I used 6x6 and then put it straight to the refrigerator for 30 minutes to an hour to set. 
2. Using your 4 Oz cream cheese mixed with sugar. Using a whisk or electric mixer, mix until creamy, then add 1/2 tsp vanilla extract then set aside.
3. In another bowl, beat your chilled APC until stiff peak, then combine with your cream cheese mixture.
4. Pour cream filling on top of your graham then refrigerate for 3 hours or so.
5. Cut 2 ripe mangoes into cubes, then use a blender to make your mango puree - in my case as I was too lazy to get the blender and the thought of I have to add it to the things I have to wash after, I decided to just still use the electric mixer. It turned into liquid BUT there's still some mango chunks left so I just let it be LOL 
6. In a pan, mix your unflavored gelatin powder, sugar and water and stir over low medium heat then add your mango puree - KEEP stirring until cooked! :)   
7. Pour the mango jelly mixture on top of the cake, then refrigerate overnight or freeze for 2 to 3 hours - In my case, I refrigerate it overnight as it'll be eaten the next day. 
8. Put mango cubes on top before serving.
